Fudge is one of the candies I grew up eating during the winter. My Mom always had a plate of candy in the house all winter long. Mom makes her fudge with condensed milk, not so good with my lactose intollerance.
I finally found a recipe for dairy free peanut butter fudge, that I love. I wanted some good old chocolate too. Here is my modified recipe for chocolate fudge. Make sure to get dairy free chocolate chips or use an dark chocolate 80% cacao bar.
Ingredients:
•1/2 cup coconut milk
•2 cups sugar
•1 cup milk chocolate chips
•2 tablespoons butter (earth balance)
•1 teaspoon vanilla
•1 cup chopped pecans or walnuts, optional
Directions:
Lightly grease a 9-inch square pan; line with a piece of tin foil or partchment paper about 18 to 24 inches in length, leaving the ends out to cover the finished fudge. The ends will also serve as "handles" which will help you lift the fudge out of the pan.
Heat the coconut milk and sugar to a boil. Boil for 2 1/2 minutes. Remove from heat add chocolate chips, butter, and vanilla. Stir until the chocolate is melted and mixture is smooth. Stir in nuts, if using; pour into the prepared pan. Spread gently then cover lightly with the ends of the plastic wrap. Chill until firm. Lift out of the pan and cut into small squares.
